Mini Pizza
You ever notice that when ordering pizza that someone ends up not being happy with the selection? It usually cost too much to order more than pizza anyways so what do you do?
Back in 1985 I was diagnosed with type one diabetes and had incredibly high cholesterol levels as well and had to go on a low fat and low sugar diet. One of the things I really missed was pizza. I love pizza but it doesn't love me. Loaded with fat and the crust which makes my blood sugars hit the ceiling makes this a treat I only eat once in awhile....unless I make my own.. This recipe is perfect for those with with kids who can't agree on one kind or is good for the dieter in general.
I use pita bread for the crust. Usually two pits breads equal about what is allowed for my diabetic diet anyways. I buy the pre-made pizza sauce and slather on about 2 tablespoons and then sprinkle with grated cheese. From there I put on whatever toppings I want. I like pepperoni and onion so I am sure to add that. You can use ground beef as well. Or, not in the mood for meat? Then just add veggies. Onion, green peppers, tomatoes, or what have ya. Top with a little more cheese and either broil or set over to 450 degree and bake until the cheese is melted. Two of these are filling and the best part is the kids can have whatever kind they want. A little pineapple chunks and sliced ham and you have a Hawaiian pizza.
My youngest daughter who is 23 still likes to come over and have these with my wife and I.
